The traditional way of making sambusa ሳምቡሳ is to frying it, which is perfect.
But I baked a flaky savory pastry dough (egg, milk and butter) filled with ayib አይብ (Ethiopian style cottage cheese).
Served it with kitfo ክትፎ.
Paired it with tej - Ethiopian style honey mead
