Ginger tej - Ethiopian style honey mead. (የዝንጅብል ጠጅ)

I love the fresh ginger - lemony pungent aroma that wafted in my nostril when grated. For years, fresh ginger was something I used in my cooking, which beautifully complements a range of dishes from sweet to savory. It can be a dominant flavoring, or it can work in conjunction with other flavors.

Ginger can also be infused into milk and cream to make a mild to tangy custard or ice cream.  Ginger's tea rejuvenating, soothing and invigorating qualities are naturally warming. It also supports healthy digestion.

My home-brewing adventure inspired me to think outside the proverbial box of my standards cooking and discover new ways of using ginger as tej flavoring and I was pleased to learn that ginger has few limitations.

During the the tej tasting sessions the coffee and the ginger flavored tej - ጠጅ [Ethiopian style honey mead] were a tie among men in general and a few ladies.

Ginger flavored tej offers an exciting blend of sweet and spicy flavors. It turns a simple tej into an intricately layered cocktail experience. Married well with the sweetness of the honey, the ginger spice appeal is big.
