Cinnamon bark - ቀረፋ

I have made my fair share of teas and I tend to like cinnamon. My two pieces of advice, the first is that if a recipe calls for whole spices like whole cinnamon bark be wary of substituting with ground spices, which then tend not to taste as good, yet release a lot more essential oils, so you end up with more spice flavor of less quality than you wanted. The second thing is to remember that you can always add more spice, but you can’t take it out. I like the spice to accent the flavor my tej, not overpower it. Spices also has a tendency to overwhelm the flavor of your tej as the tej ages.

That being said, cinnamon Bark tej - ቀረፋ ጠጅ Ethiopian style honey mead finishes sweet and warm, light body, which you want to sip relaxing on your porch in a hazy summer day.
